Ingredients

2 chicken breasts

1 quart water

dash salt

1 bay leaf

whole peppercorns

1 cup long grain rice

4 Tbls oil

2 cups Chicken stock

1 cup Tomatoes (chopped)

1/2 cup Onions (chopped)

4 cloves Garlic (mashed)

1/2 cup bell pepper (sliced)

Salt and pepper to taste

Preparation

  • Poach chicken in water with salt, bay leaf, and peppercorns.
  • Saute rice in oil till golden.
  • Add stock, tomatoes, onion, garlic, and salt and pepper.
  • Bring to a boil, then simmer.
  • Cut chicken in pieces and arrange on top of rice, then bell pepper on top of chicken.
  • Cover and simmer 35 minutes.
