Ingredients
6 boneless skinless chicken breasts
6 tbsp pesto sauce
2 large cloves garlic, peeled and minced
1 package spinach, blanched and drained
6 slices provolone or swiss cheese (or more to taste)
1/2 cup chicken broth
Preparation
- Thoroughly clean chicken, removing all visible fat. Lay out on prep area, and pound to 1/2" thick.
- Place the pesto sauce and the minced garlic in a bowl, mix.
- Spread the mixture over the chicken breasts, apx 1 tablespoon per pc.
- Spread a generous layer of spinach over each breast.
- Fold the chicken pcs in half, and secure with skewers or string.
- Place the chicken in a glass baking pan that has been sprayed with cooking spray.
- Place a slice of cheese over each pc of chicken. Pour the broth into the pan.
- Bake at 350 degrees until done, apx 30 minutes.
