Ingredients

6 boneless skinless chicken breasts

6 tbsp pesto sauce

2 large cloves garlic, peeled and minced

1 package spinach, blanched and drained

6 slices provolone or swiss cheese (or more to taste)

1/2 cup chicken broth

Preparation

  1. Thoroughly clean chicken, removing all visible fat. Lay out on prep area, and pound to 1/2" thick.
  2. Place the pesto sauce and the minced garlic in a bowl, mix.
  3. Spread the mixture over the chicken breasts, apx 1 tablespoon per pc.
  4. Spread a generous layer of spinach over each breast.
  5. Fold the chicken pcs in half, and secure with skewers or string.
  6. Place the chicken in a glass baking pan that has been sprayed with cooking spray.
  7. Place a slice of cheese over each pc of chicken. Pour the broth into the pan.
  8. Bake at 350 degrees until done, apx 30 minutes.
