Ingredients

4 chicken quarters

2 cups chicken broth

1 onion, coursely chopped

1 lb bag frozen peas and carrots

1 strip of bacon

1/4 teaspoon salt

1/4 teaspoon pepper

1 cup red wine

Preparation

Put chicken, broth, onion, peas and carrots and bacon, salt, pepper and wine in slow cooker on low for 5 hours or until chicken is fully cooked.

It freezes well so I often make it for friends when they have a new baby.

Enjoy with bread and butter.
