Ingredients
4 whole chicken breasets, split, skinless, and boned
1/2 teaspoon allpurpose seasoning salt
1/2 teaspoon of fresh grinded black pepper.
1/3 cup olive oil
1/3 fresh squeezed lemon juice
1/2 butter
2 teaspoon of minced chives
1 teaspoon of dry dill weed
Preparation
Sprinkel chicken with seasoning salt and pepper. Heat oil in large skillet over medium heat. Add chicken cook untill light brown, about 3 1/2 min. per side. Cover, reduce heat to low. cook 10 minutes or until chicken is tender. Remove chicken to serving plate: keep warm (cover with foil).
Discard oil from skillet. Add lemon juice; cook over low heat until juice is bubbling, about 1 min. Add butter, 1 tablespoon at a time, stirring until butter sauce thickens. Remove from heat stir in chives and dill weed. Spoon sauce over chicken and serve with green salad for side dish.
