Ingredients

4 boneless chicken breasts

3 TBS fresh lemon juice

1 !/2 c chicken broth

2 1/2 TBS honey

2 TBS dijon mustard

1/2 c slice dried apricots

2 TBS coarsely chopped walnuts

1TBS chopped parsley

salt and pepper to taste

Preparation

1.. Grill Chicken 2. Combine broth, lemon juice, hone and mustard in small sauce pan. Whisk together and bring to boil on high heat. Once comes to boil, simmer for 20 minutes. You want it reduced to a little less than half the volume you start with. It will thicken and intensify flavor 3. Add apricots and cook on high for another 5 minutes. When sauce is done, add chopped walnuts, parsley, salt, and pepper.

Serve over cooked spinach or other cooked greens.
