Ingredients

2 teasp. canola oil

1.5 pounds chix breast pounded thin

salt and pepper

3 Tablespoons thinly sliced shallots

2 Tablesp. flat leaf parsley

SAUCE:

1/2 cup beer… used old dog ale (really good!)

2 Tablesp. soy sauce

1 Tablesp. whole-grain dijon mustard

1 Tablesp. honey

Preparation

heat large skillet over med. high heat , add oil to pan and swirl sprinkle chicken with salt and pepper add chicken to pan and sauté for about 4 mins per side remove chicken and keep warm add a little oil to pan and saute shallots for 1 min or until translucent combine beer, soy sauce, mustard and honey ( QUADRUPLE THE SAUCE)– WHISK IT add beer mixture to pan, bring to a boil, scrape pan to loosen brown bits, cook a few mins until liquid is reduced return chicken to pan, turn to coat with sauce sprinkle with parsley
