Ingredients

(3) Boneless Chicken Breasts, skin on

4-5oz Garlic & Herb Goat Cheese

(3) Large Fresh Basil Leaves

Olive Oil

Kosher Salt

Freshly Ground Black Pepper

Preparation

  • Preheat oven to 375 degrees
  • Place Chicken on sheet pan. Loosen the skin with your fingers, leaving one edge attached.
  • Cut the Goat Cheese into 1/2" thick slices and place 1 or 2 slices plus a large basil leaf under the skin of each chicken breast.
  • Pull the skin over as much of the meat as possible so the chicken won’t dry out.
  • Rub each piece with Olive Oil, then sprinkle generously with salt & pepper.
  • Bake for 35-40 minutes until skin is lightly brown and meat is just cooked through (not dry). Serve hot or at room temp.
