Ingredients
1 tsp olive oil
1/2 tsp minced garlic
4 oz boneless, skinless chicken breast, cut into 1 inch pieces
Pinch dried thyme
Salt and pepper
1 cup frozen broccoli florets
1/2 cup chicken broth
1 cup cooked brown rice
Preparation
Heat all in large skillet over med-high heat. Add garlic and saute for 1 min. Season chicken with thyme, salt and pepper. Add to skillet. Cook, stirring frequently until browned, about 3 mins. Add broccoli, cook 1 min. Add broth, cover and cook 5 mins. Serve over rice.
