Ingredients

2-4 Tablespoons extra virgin olive oil (don’t skimp!)

1 cup leftover roasted chicken meat, roughly chopped or shredded

1 15 oz. can cannelini beans, rinsed

2 cups arugula, lightly packed

Salt, Pepper and more Olive Oil for seasoning

Preparation

Put the olive oil in a hot saute or fry pan that’s large enough to toss the ingredients. Add the chicken and beans, saute until hot adn then add the arugula, tossing the mixture lightly until the arugula is wilted.

Season to taste - be generous with the salt and oil.
