Chicken & Whole Wheat Penne Pasta Salad

This is a fast & easy low-carb friendly recipe.

4 cups chopped cooked chicken breast 2 large cloves garlic, minced 1 cup roasted, chopped red peppers from jar ¼ cup chopped fresh basil 1 cup cooked whole wheat penne pasta

4 tablespoons freshly grated Asiago

Vinaigrette Dressing:

6 tablespoons extra virgin olive oil 3 tablespoons balsamic vinegar ½ teaspoon Dijon mustard ½ teaspoon salt ½ teaspoon freshly ground pepper

Combine all ingredients for the Vinaigrette dressing in a screw top jar. Cover and shake until thoroughly mixed. Set aside.

Combine first 5 ingredients, chicken through pasta, in a medium bowl. Add the vinaigrette dressing; mix well. Refrigerate for 1 hour. Sprinkle grated Asiago over salad and serve. Makes 6 Servings.
