Ingredients

Dressing

1 Cup Pineapple Juice

1 Cup Apple juice

1/4 Cup Mayo

2 Tablespoons honey

2 Tablespoons Dijon mustard

1/2 teaspoon tumeric

1/2 Cup Olive oil

Salad

4 Cups Cubed grilled chicken

1 1/2 Cups diced Granny Smith apples

1 1/2 Cups halved seedless red grapes

1 Cup chopped celery (2 stalks)

1/2 Cup very thinly sliced red onion

1/2 cup toasted walnuts

1 5 oz. bag spring lettuce mix

Preparation

DRESSING

  • Place pineapple juice and apple juice in medium sauce pan, boil until mixture coats the back of a spoon and is reduced to 2/3 of a cup (about 10 mins.) Cool completely.

  • Whisk mayo, honey, mustard and tumeric in a medium bowl. Gradually mix in juice, then oil. Season with salt and pepper.

SALAD

  • Mix first 6 ingredients in large bowl. Add dressing and toss to coat.
  • Add lettuce, toss gently to coat.
