Ingredients
2 Cups of Water
6 Sun dried Tomatoes
4 Skinless boneless Chick breasts
1/2 tsp salt
1/4 tsp pepper
1 Tblsp EVOO
4 slices of low fat swiss
1 Cup beef broth
2 Tbsp Balsamic Vinegar
1 Tsp oregano
Preparation
Boil tomatoes for ten minutes. Season chicken with salt n pepper. Heat oil in pan and fry chicken 3 minutes on each side. Put on tomatoes and cheese. Cook for 1 minute. Add broth, Vinegar, oregano. Bring to a boil for 3 more minutes. Transfer chicken to a plate and then cook broth for 1 more minute and pour over chicken.
