Ingredients
Tortilla Soup:
Boil one whole chicken, debone and reserve broth
2-3 cans of chicken stock
2 cans of Rotel tomatoes with green chilies
2 cloves of Garlic (2-3 tsp of minced)
Half of a large onion chopped
1.5 TBSP of chili powder OR 3 tsp of adobo
sauce/seasoning (contains peanut products)
1 TBSP of cumin
1 TBSP of fajita seasoning
add black pepper and cayenne as desired to taste
1-2 cups of instant rice
Garnishes:
Cilantro- add about a handful of chopped to the soup
and chop the rest for people to add as they wish
Shredded Colby Jack Cheese
Sliced avocados
fried strips of corn tortillas OR corn chips
Preparation
Combine all ingredients in a stock pot and cook over medium heat for about 20 min or until onion is translucent. Add rice and let cook covered for 10 min.
