Ingredients

2 lbs. Chicken

Salt & Pepper to taste

1 ½ tsp. . Pepper

1 lg. Onion (chopped)

2 lg. cloves Garlic (chopped)

1 (14 oz.) Diced Tomatoes in Juice

¾ C. Kalamata Olives (pitted)

½ C Dry White wine

2 tsp. Oregano

2/3 C. Feta

2 tbs. Parsley (chopped)

Preparation

Sprinkle chicken with salt and pepper. Heat oil in deep skillet. Sauté Chicken and transfer to plate. Add onion to drippings; cook about 3 minutes until soft. Add garlic and cook 1 minute. Add tomatoes, olives, wine and oregano. Return chicken and juices, cover and simmer until chicken is tender (about 25 minutes). Remove lid last 5 minutes. Serve over orzo and sprinkle with feta and parsley.
