Ingredients

For Taquitos:

1 cup cooked chicken breast

taco seasoning (packaged or home-made)

4 small, soft tortillas

1 plum tomato, diced

1 scallion, diced

shredded mexican cheese, store-bought

For Pico de Gallo:

2 plum tomatoes, small-diced

1/2 small onion, small-diced

1/8 cup cilantro, minced

Preparation

  1. Preheat oven to 400F and coat a baking pan with cooking spray.
  2. Dice chicken small.
  3. Heat chicken over low heat, mixed with taco seasoning and a bit of water. Simmer for a few minutes to marinate.
  4. Lay out 4 tortillas and add a thin line of chicken, tomato, scallions and cheese. Roll up tight and place in baking pan, seam-side down. (Width of each Taquito should be about the size of a “D” battery).
  5. Bake for 15 minutes.
  6. Serve with Pico de Gallo.
