Ingredients

1 1/2 cups chicken stock

1 1/2 cups salsa

2-8 oz skinless, boneless chicken breasts

8 whole-wheat tortillas

Shredded lettuce

Diced tomatoes

Shredded cheddar cheese

Sour cream

Preparation

  1. In a large saucepan, bring stock & salsa to a simmer over medium heat. Add the chicken & simmer covered, until tender, about 1 1/2 hours. Remove chicken from pan. Reserve cooking liquid.

  2. Shred chicken & put into a bowl. Drizzle with enough of the cooking liquid to keep the chicken moist.

  3. Fill tortillas with chicken & top with lettuce, tomatoes, cheese & sour cream.
