Ingredients
1/2 Lettuce head
2 C. Cooked chicken cubes
1 tomato, chopped
1/2 C. Sliced ripe olives
1/4 C. Sliced scallions
8 slices crumbled bacon
3/4 C. Grated cheddar cheese
1 C. Crises corn chips
DRESSING
1 medium avocado
1 Tbsp. Lemon juice
1/2 C. Sour cream
1/4 tsp. Veg. Oil
1 clove minced garlic
1/2 tsp. Sugar and chili powder
Preparation
Mix dressing ingredients until smooth. You may use a blender. Chill. Layer salad ingredients, beginning with lettuce and ending with cheese in a 2qt. Glass dish. Spread chilled dressing over top and sprinkle with crushed corn chips.
