Ingredients
6 chicken breasts, cubed
8 warmed pita breads
Marinade:
Small bunch of mint, chopped
3 garlic cloves, finely chopped
1 red chili, finely chopped
Juice and grated zest of 1 lemon
1 tablespoon corinader seeds, crushed
1 teaspoon turmeric
1 cup plain yogurt
1/4 cup olive oil
salt and pepper
Dressing:
large bunch of fresh cilantro
1 cup plain yogurt
juice and zest of 1 lemon
2 tablespoon olive oil
Preparation
- Mix all marinate ingredients in bowl together
- Add chicken cubes to marinade and smother. Marinate at least overnight and up to 3 days
- Grill chicken - about 6 minutes per side on skewers. Rest for 5 minutes
- Put all dressing ingredients into food processor and make smooth green sauce.
Pour sauce over chicken in pitas. Serve with extra cilantro.
