Ingredients
4-6 lbs Chicken (if possible get neck bones and backs for cheap, they have lots of flavor)
Carrots
Onion
Parsnip
Parsley
Dill
Preparation
Rinse chicken, place in soup pot Cover with water but not by much.
Bring to boil, when at full boil reduce to simmer.
After 15 minutes, check and skim the scum, keep going this until that nasty stuff stops forming.
after done skimming, peel and cut carrots, parsley, parsnip into ready to eat pieces, put in pot
cut onion into 1/4’s put in pot
add dill and parsley
cook at simmer for at least 90 minutes, remover dill and parsley before serving
strain thru cheese cloth if necessary
