Ingredients
For Marinade:
1/2 cup pineapple juice
1/4 cup oil
1 tsp. Dijon mustard
1 tbsp. brown sugar
1 tsp. salt
1tsp garlic powder
1/4 tsp. pepper
1/2 cup soy sauce
For Kabobs:
1 lb chicken breasts, chopped
1 red onion, coarsely chopped
1 green bell pepper, coarsely chopped
cherry tomatoes
(mushrooms or pineapple an option)
Preparation
Combine the marinade ingredients in a saucepan and boil for five minutes. Marinate the chicken in the refrigerator for 2 (plus) hours. Build kabobs and grill, basting with the rest of the marinade.
