Ingredients
3.5 lbs. chicken cut into serving pieces
Salt & freshly ground pepper
Flour for dredging
3 tbs. corn oil
2 tbs. butter
1 tbs minced garlic
Juice of half a lemon
3/4 cup dry white wine
1/4 cup finely chopped parsely
Preparation
- Dredge the chicken in flour sprinkle with salt and pepper to taste
- Heath the oil in a skillet and add the chicken pieces skin side down. Cook over moderately high heat about 8-10 minutes.
- Turn the pieces and cook about 10 to 12 minutes longer.
- Pour off the fat. Add the butter and garlic and stir to coat the chicken pieces.
- Add the wine and bring to boil. Sprinkle with lemon juice and parsley. Cook about 3 minutes longer
