Ingredients
2 T Olive Oil
1 large, yellow Onion sliced in half moons
1 28 oz can diced Tomatoes
1 1/2 cups sliced Peppers
Bay Leaf
1 cup red Wine
6 chicken Sausages
2 cups chicken Broth
S&P
Preparation
Heat oil in large frying pan. Add onion slices to hot oil. Sautee onions until fully caramelized. Add tomatoes, peppers, bay leaf and bring to a simmer. Add wine and let simmer 20 minutes. Add sausages, bring to a simmer again. Add broth and cook another 20 minutes. Season to taste.
