Ingredients
4 boned and skinned chicken breast half
1/4 cup apple juice, frozen concentrate, thawed
2 tablespoons cooking oil
2 tablespoons soy sauce
1 tablespoon white wine vinegar
1 teaspoon savory
1/2 cup mayonnaise
3 tablespoons apple juice, frozen concentrate
1 tablespoon coarse grain mustard
1/4 teaspoon salt
1/4 teaspoon pepper
6 cups mixed greens
2 apples
3/4 cup pecan, chopped
1 tablespoon butter, melted
1/4 teaspoon cumin
1/8 teaspoon cayenne pepper
1 dash salt
Preparation
At least 6 hours prior to grilling… Pound chicken breasts until 1/2 inch thick or less Combine 1/4 cup apple juice concentrate, 2 tbs cooking oil, soy sauce, white wine vinegar and savory; add to plastic bag with pounded chicken breasts. Marinate for 6 to 24 hours
Dressing: Combine mayonnaise, 3 tablespoons apple juice concentrate, mustard, salt and pepper.
Spiced Nuts: combine pecans, melted butter, cumin, cayenne pepper and salt. Bake at 350 on a cookie sheet for ~10 minutes, stirring once or twice, until brown
Grilling: Brush with reserved marinade after turning
Slice chicken diagonally into 1/2 inch strips; arrange over greens in serving bowl; arrange sliced apples over that; top with dressing followed by sprinkling with spiced nuts
