Ingredients

2 grilled chicken breasts (marinaded in teriyaki sauce or another marinade or plain)

1/4 granny smith apple: peeled and diced into small pieces

four scallions thinly sliced

1/8 c. slivered almonds - toasted until light brown and then coarsely chopped

2 T. finely chopped fresh parsley or cilantro

Dressing:

1/4 c. mayonnaise

1 tsp. dijon mustard

1 T. vegetable oil

1 tsp. white or cider vinegar

Preparation

Coursely chop chicken breasts and combine with apples, scallions, almonds and parsley.

Thoroughly mix dressing ingredients and pour over chicken. Serve on top of salad greens.
