Ingredients
2 13 ounce cans of chicken
1 large cucumber, seeds removed
1/2 cup of chopped almonds
8 oz. plain yogurt
2 tablespoons of dill
2 tablespoons of lemon juice
1 tablespoon of faux mayo, like Smart Balance
Preparation
Combine chicken, chopped almonds, and seeded, chopped cucumber together in large bowl. Add in lemon juice, mix. Let stand for just a few minutes. Add in dill, then plain yogurt & faux mayo. Mix all together and serve on a bed of spinach or in a sandwich.
