Ingredients
1 sliced heart of romaine
1 good handful baby arugula
2 chicken breasts, from purchased rotisserie chicken, cooled, sliced or shredded
1 avocado, quartered and then sliced into thirds
1/2 - 1 cup fresh raspberries
1/2 cup peeled, sliced English cucumber
1/4 red onion, thinly sliced (optional)
handful alfalfa sprouts
1/4 cup slivered almonds, toasted
Dressing
1 Tbsp raspberry balsamic vinegar
3 Tbsp olive oil
2 tsp honey mustard
1 Tbsp mayonnaise
2 Tbsp sour cream or buttermilk
salt, pepper
Preparation
Arrange greens on platter. Top with chicken. Surround with attractively arranged cukes, raspberries, red onion, avocado slices, sprouts. Sprinkle almonds over all. Whisk together dressing ingredients and adjust to taste. Drizzle salad with dressing.
