Ingredients

2 tsp. canola oil

1 green onion

1 line

chicken breasts

4 burrito flour tortillas

1 c. Mexican cheese blend

1/2 avocado peeled, seeded, and cut

3/4 c. salsa

Preparation

Heat oil and add onion.

From lime,, grate 1 tsp. peel and squeee 2 TBS juice into bowl. Evenly season chicken with peel, salt and papper. Add chicken to onion and cook 10 minutes. Add lime juice.

Evenly divide chicken mixture and cheese on half of each tortilla.

In same skillet, cook quesadillas on medium, in 2 batches til browned. Stir avocado into salsa and serve with chicken quesadillas.
