Ingredients

6 boned, skinned chicken breast

4 tbls olive oil

1/2 cup chopped black olives

2 fillets minced anchovies

1 clove minced garlic

1/2 cup white wine

2 cups chopped tomato

2 tbls chopped fresh basil

Preparation

In large skillet heat butter & oil, saute chicken on both sides until brown, remove from pan. In same skillet swirl wine; add garlic, tomatoes, anchovy, olives & basil. Simmer 5 minutes. Add chicken, cover, simmer until tender, about 30 minutes.
