Ingredients

Roux:

3 T. chicken fat

3 T. flour

1 C. chicken stock

2 T. cornstarch

Vegetables:

1/2 C. mushrooms, optional

1/2 C. celery, diced

1 C. carrots, diced

1 small onion, chopped

1/2 C. peas.

Chicken and Potato Topping:

4-5 C. chicken, diced

4 cooked potatoes, mashed

Preparation

Chop up the vegetables. Dice up the chicken. Cook potatoes 20 min. and mash. Cook chicken fat and add flour, chicken stock and cornstarch. Stir until sauce is smooth. Place all ingredients into a casserole. Top with mashed potatoes. Bake 350 degrees for 30 min. May brown potatoes under broiler for 1-2 min.
