Ingredients
1 1/2c. roasted chicken or turkey, cut into 1/2 inch cubes
4 celery stalks, chopped
3/4 c. red grapes, sliced in half
1/2 c. shelled salted pistachios, roughly chopped
1/3 c. light Hellmans mayonnaise (NOT FAT FREE/Low FAT)
1/4 tsp salt
1/4 tsp fresh ground pepper
Lettuce
Preparation
Combine pre-cooked chicken, celery, grapes, pistachios, mayo, salt & pepper in a large mixing bowl. Stir well to coat and refrigerate until ready to serve. Serve on top of a layer of lettuce
