Ingredients
1 fresh pineapple
cleaned & cubed into 1" pieces. 2 large boneless chicken breasts
cooked & cubed into 1" pieces. 1-2 lg. seedless oranges
peeled & cut into 1" pieces. 1 Cup cooked brown-rice.
Preparation
Place marinade in plastic freezer-bag & add chicken. Let sit in refrigerator 1 hour. Remove Chicken and place on paper towels to drain. Place chicken, pineapple, & orange pieces alternately on soaked skewers. Cook on grill-pan heated thoroughly. Turn when grill marks show. Place on serving platter on a bed of cooked rice.
