Ingredients
1 1/3 cup minute rice
1/2 envelope dry onion soup
1 can cream of mushroom soup
4 chicken breasts
1 onion sliced and sauteed
1 1/2 cups boiling water
1/4 cup dry sherry
melted butter
salt and pepper
Preparation
Combine all ingredients except chicken, butter, and seasonings in a casserole pan. Brush chicken with butter and season with salt and pepper. Place chicken on top of rice. Cover with foil. Bake at 375 degrees for 1 hour 15 minutes or until tender.
