Ingredients
orzo
1.5-1.75 lbs flattened chicken
salt, pepper, olive oil
1/2 cup white wine
1 cup chix broth
2 T fresh lemon juice
2 T chilled butter
Preparation
cook orzo
heat large skillet over med-high, add olive oil and mb a T of butter, put flattened, salted and peppered chicken in and cook 3-4 mins a side. take out and keep warm
add wine, cook 1 min or until most liquid evaps, scraping pan to loosen brown bits. add broth and lemon juice, bring to a boil. cook 2 mins until reduced to 1 cup. remove from heat and add butter stirring until melts.
serve over orzo and put chicken on top
