Ingredients
10 B/S chicken breasts
3 C fresh french breadcrumbs
2 lg eggs
1 C flour
6 T olive oil
3 C grated mozzarella
1 1/4 C gr parmesan & romano
2 T fresh Italian parsley
Preparation
pound breasts until 1/3 “, sprinkle with S & P both sides. Spread breadcrumbs on plate, whisk eggs to blend in med bowl.Four on another plate. Coat both sides of chicken with flour then eggs, then crumbs. Oven 350, heat 2 T oil in lg nonstick skillet, add chk cook til brown 2 min both sides. Spread 1 C sauce on bottom of 15X10 in glass pan. Arrange 1 layer chk over sauce, spoon 2 C sauce over, sprinkle 1/2 mozz, parm then romano. Repeat with last of chk, sauce & cheeses. Bake until cheese melts & chk is cooked thru, about 20 min. Sprinle w,parsley.
