Ingredients
2 pounds chicken wings
2 pounds chicken jiblets
3 pounds ground chuck
2 carrots (sliced thin)
2 stalks celery (chopped)
1 medium onion (chopped)
Meatloaf Mixture (with Matzoh Meal instead of bread crumbs)
Kosher Salt
Black Pepper
Garlic Powder
Onion Powder
Paprika
Preparation
Pre-heat oven to 325.
Place chicken parts, carrots, celery and celery in roasting pan; add salt, pepper, garlic & onion powder, and paprika to taste; add water to 1/2 height of all contents; bake covered until soft (approx. 2 hours).
Make small meatballs out of chuck and meatloaf mixture.
Remove roasting pan from oven; uncover and let sit 10-15 minutes.
Place meatballs into mixture; recover; return to oven.
Bake until nearly done; remove cover and return to oven until brown (approx. 30 minutes).
