Ingredients

1 Tub Buitioni Pesto

2 Tablespoons white wine vinegar

3 Tablespoons Olive Oil

Salt and freshly ground pepper

Rotisserie Chicken or chicken breast (shred white meat)

3/4 lbs Orzo

1/2 lb cherry or grape tomatoes

5 oz Spinach

1 Tub Feta Cheese

Preparation

  1. Make vinaigrette: whisk together pesto, vinegar, 1/4 tsp salt, pinch pepper. Gradually whisk in oil
  2. Bring large pot of water to boil; add 2 Tablespoons of Salt to water. Cook Orzo as directed. Drain, rinse with cold running water and drain again.
  3. Add Chicken, tomatoes, and spinach to orzo and toss; Add vinaigrette to orzo and toss; Add Feta to top it off.
