Ingredients
2 large checken breast cut into small strips OR
2 doz shrimp, peeled, deveined and cooked
1/2 cup olive oil
1 Tbs chopped Garlic
4 TB Lemon Juice
1/2 tsp red pepper flakes (1 whole TBS if you like it hot
1 cup cherry tomatoes or 1/2 cup dices tomatoes
3 TBS Parlsey (fresh is best
You can add green, red peppers, zucchini, yellow squash and red onion & mshrooms
Preparation
Sauteee Chix or Shrimp in 1/2 cup olive oil
Remove with slotted spoon. Add 2 TBS Lemon Juice t tsp salt 1/2 to 1 TBS Red Pepper Flakes, 1 TBS Chopped Garlic 3 YBS FRESH Parsley and any veggies you like plus diced tomatoes
Stir until 1/2 way done add meat and continue to heat until veggies reach a slight grunch when bite into. Serve over ORZO.
