Ingredients
Vegetable cooking spray
1 cup instant mashed potato flakes
1 1/2 tablespoons grated Parmesan cheese
1 1/2 teaspoons paprika
1 1/2 teaspoons onion powder
1/2 teaspoon salt
Whites of 2 large eggs
1 pound boneless, skinless chicken breast halves, cut crosswise into 1-inch-wide strips
2 tablespoons honey (optional)
1 cup fat-free plain yogurt (optional)
Preparation
Heat the oven to 500 degrees.
Set a wire rack on a baking sheet. Coat the rack with cooking spray.
Mix the potato flakes, cheese, paprika, onion powder, and salt on a piece of waxed paper.
In a medium bowl, beat the egg whites with a fork until slightly frothy.
Add the chicken to the egg whites and toss to coat.
Dredge the chicken strips in the potato mixture to cover.
Place the chicken strips on the prepared rack and lightly spray the top of the chicken with cooking spray.
Bake for 3 minutes, turn the strips over, spray again, and bake for another 1 to 3 minutes, until the chicken is crisp and cooked through.
Serve with honey or yogurt as dipping sauces, if desired.
