Ingredients

4 chicken breasts

1/4 cup salsa

1/2 cup crushed tortilla chips

1/2 cup shredded cheese

2 slices bacon, chopped

1 small onion, chopped

2 cups grape tomatoes

2 cups long grain brown rice, cooked

1/4 cup sour cream

Preparation

Heat oven to 400 degrees. Place chicen on foil-covered baking sheet. Top with salsa. Bake 20 min, topping with chips and cheese the last 5 min. Meanwhile, cook bacon, drain on paper towels. Cook onion for 5 min. Stir in tomatoes, cook for 4 - 5 min, or until tomatoes begin to pop. Add rice. Cook until heated thru. Stir in bacon. Top chicken with sour cream. Serve with rice mixture
