Ingredients

DRESSING:

1/4 c. mayonaise

3 Tbsp. orange juice OR juice of half a lemon

3/4 tsp. ground ginger

SALAD

3 1/2 - 4 cups cubed, cooked chicken

2 crunchy, red apples (Fuji, Gala, etc., cored and cut into bite-size pieces, leaving skin on each piece

4 ribs celery, sliced diagonally

1/4 c. raisins (optional)

1/4 c. chopped, toasted walnuts or pecans

Preparation

Make dressing: Whisk together all ingredients, and chill until ready to use.

Make salad: Mix all salad ingredients together

Add dressing, and toss lightly.

If desired, serve on lettuce leaf, garnished with additional apple slices.
