Ingredients

2 Skinless Chicken Breasts

1 pound Mushrooms, sliced

1 Cup Marsala wine

1/2 Cup flour

1 TBSP. oil

2 TBSP. butter

1 medium onion, chopped

2 TBSP. fresh basil (dried will work as well)

salt and pepper to taste

Preparation

Saute’ mushrooms and onions in butter, until onions are opaque. Set aside. Shake chicken in flour, basil and salt and pepper. Brown in oil on all sides. Add sauteed mushrooms and onions and Marsala wine. Let simmer covered approx. 20 minutes to 1/2 hour. Uncover and simmer approx. 5-10 minutes longer.
