Ingredients

boneless chicken breast 16 oz

flour

2 tbsp butter or olive oil

2 cloves garlic sliced

4c. sliced mushrooms

3 tbsp soy sauce

4tbsp dry white wine

2 tbsp fresh lemon juice

2-3 tbsp chicken stock

1 1/2 c fresh cubed tomatoes

1/4 c sliced scallions

Preparation

Flatten chicken with meat mallet slice into bite size pieces. Assemble all other ingredients because this cooks quick Dredege chicken in flour

Large frying pan or cast iron skillet add butter or oil garlic and chicken and sute until the chicken is browned

Flip the chicken and add mushrooms, stirring until mushrooms begin to darken.

Add liquid ingredients and stir while thepan sauce thickens (about 2 minutes)

Add tomatoes and scallions, stir briefly. Serve over rice.
