Ingredients
*4-6oz skinless boneless chicken breasts
*1 cup lime juice (fresh is best)
*1/4 cup tequila
*1/4 cup honey
*two chopped hot peppers
*two cloves garlic, peeled and chopped
*3tbs canola oil
*1 tsp salt
Preparation
Mix the lime juice, tequila, honey, peppers, garlic, oil and salt in a glass bowl. (I usually make the marinade the day before to let the flavors really blend).
In a shallow glass pan, place the chicken breast and cover with the marinade. Place bowl in the refrigerator and allow to marinate at least 30 minutes or up to 6 hours, turning meat at least once. 20 minutes before grilling, remove chicken from frig and allow to sit at room temp.
Grill over direct medium heat, turning chicken with tongs after 6-8 minutes. Chicken is done when it reaches an internal temperature of 170 degrees.
