Ingredients
1 chicken, cut up
1/4 head garlic, finely chopped
1 tbsp dried oregano
1/2 tsp salt
1/4 tsp ground pepper
1/4 cup pitted prunes and dates combo
1/4 cup pitted spanish olives
1 tbsp capers in juice
2 bay leaves
1/4 cup brown sugar
1/4 cup white wine
1/4 cup fresh chopped parsley or cilantro
Preparation
combine all ingredients except brown sugar and white wine. marinate overnight.
soak clay pot while browning chicken.
add browned chicken and marinade juices to claypot. sprinkle over brown sugar.
deglaze pan with white wine then our over chicken.
salt and pepper.
cook at 425 for 1:15.
