Ingredients
1 pound chicken liver
1/2 cup chopped onion
chopped garlic
4 tablespoon good cognac/brandy
3/4 cup butter
1/4 teaspoon salt
1/4 teaspoon ground black pepper
fresh thyme and rosemary

- In a pan, put butter, cook onion, garlic until soft, then add liver, cook until liver is cooked, add cognac, season to taste with salt and pepper
- Place cooked livers in a blender or food processor, and process until smooth. Chill for 1 hour before serving.
