Ingredients

• 1 pound chicken liver

• 1/2 cup chopped onion

• chopped garlic

• 4 tablespoon good cognac/brandy

• 3/4 cup butter

• 1/4 teaspoon salt

• 1/4 teaspoon ground black pepper

• fresh thyme and rosemary

Directions

  1. In a pan, put butter, cook onion, garlic until soft, then add liver, cook until liver is cooked, add cognac, season to taste with salt and pepper
  2. Place cooked livers in a blender or food processor, and process until smooth. Chill for 1 hour before serving.
