Ingredients
-5 lbs chicken breasts
-2 C fresh lemon juice
-2 C flour
-2 t salt
-2 t paprika
-1 t black pepper
-1/2 C corn oil
-2 T grated lemon zest
-1/4 C brown sugar
-1/2 C chicken stock
-1 t lemon extract
-2 lemons, sliced paper thin
Preparation
- Combine chicken breasts and lemon juice in a bowl just large enough to hold them comfortably. Cover and marinate overnight, turning occasionally
- The next morning, drain chicken, pat dry and place in a ziplock bag containing the flour, salt, paprika and pepper. Shake.
- Preheat oven to 350º
- Fry chicken in corn oil until well browned and crisp (about 10 minutes)
- Place chicken in a shallow baking dish and sprinkle with lemon zest and brown sugar
- Mix chicken stock and lemon extract and pour over chicken
- Place a thin lemon slice over each chicken breast
- Bake at 350º for 35-40 minutes
