Ingredients

2 Large chicken breasts

4 cloves of garlic

*Half a small onion

2 teaspoons of ground cumin (whole seeds freshly ground are prefered).

Teaspoon of Cayenne pepper (adjust acording to individual preference i.e. how hot you like it).

Pinch of Salt.

Two table spoons light olive oil.

Preparation

Put the onion and garlic in a processor and blend to a pulp (this can also be done with a fine greater). Put the pulp, Cumin, Cayenne pepper and oil into a large glass bowl and mix well. Chop your chicken into 3mm cubes and add to the bowl; mix well, cover with clingfilm and marinade in the fridge for 1/2 hour or even over night if time allows. Thread the chicken onto skewers and grill on a medium heat until cooked through, around 10 minutes.

Serve with warm pita and a tomato and cucumber salad.
