Ingredients

Meat from one (3-5 LB)chicken

4 Lbs sausage

2 large onions

3 Cups Rice

1 TBL white pepper

Hot sauce to taste

6 Cups broth

Preparation

Slice Sausage into 1/8" rounds. Coarsely shop onions. Brown sausage and onion in batches to get a good carmalization to the sausage. Add sausage, onion, and chicken to pot. Dump in the rice and add the pepper and hot sauce. Add broth, stir and bring to a simmer. Simmer until rice is cooked.
