Ingredients

1 whole chicken cut in eighths

1 Jar (12oz) sun dry tomatoes in oil

3 carrots peeled and diced

4 potatoes peeled and diced

1 large onion peeled and diced

8 cloves of garlic sliced in half

Preparation

Preheat oven 425* Rinse and pat dry the chicken pieces. Arrange chicken in a baking pan, mix vegetables with the jar of sun dried tomatoes and pour over chicken. Bake for 45-50 minutes.
