Ingredients
1 whole cut up chicken
1 Bunch carrots cut into 2" pieces
3 tablespoons Olive oil
2 onions cut into eigths
6 Large potatoes cut into quarters
10-12 cloves fresh garlic cut into halves
Few sprigs Fresh Thyme
1 branch fresh Rosemary
1 bottle white wine
Salt & Pepper to taste,
Garlic powder
Pinch crushed red pepper flakes
2 cubes Knorrs chicken boullion
Preparation
Season chicken with salt, pepper and garlic powder In a Large Pot on Hi heat - sear Chicken skin side down until skin is crisp approx 4-5 mins. Then Add chicken liver and neck and sautee an additional 2-3 minutes Add Garlic and Crushed red pepper cook for 3-4 minutes and then add onions, carrots and potatoes, allow to simmer a few minutes until all flavors meld together, Add white wine,fresh Thyme and Rosemary allow to simmer until alcohol is cooked out, Add chicken boullion and cover - simmer until carrots and potatoes are soft - Approx. 40 minutes.
